I’m often asked where did I learn the art of culinary nutrition and what is it anyway? Well, the answer is the wonderful Academy of Culinary Nutrition!
This school is amazing because it taught me the healing power of the foods we eat and how to maximize these foods to fit my philosophy of reaching optimal health in a way that does not compromise taste! Along with this, I’m educated in how to effectively share this knowledge through workshops, cooking classes, recipe development, menu planning and writing.
Every year, the academy gathers some of the best original recipe creations from graduates of the Academy of Culinary Nutrition in an effort to help raise money and awareness around the importance of from scratch, health supportive cooking that elevates not only the health of ourselves, but each other and the planet.
2020 is the 7th running of the From Scratch Fundraiser and it has had an incredible impact. Since the first edition was published, we have raised nearly $70,000 for charities around the world, including Thrive, Charity Water, Kiva, Pencils of Promise, The Red Cross and Community Food Centres Canada.

This flavourful Thai-inspired dish helps improve constipation and alleviate gastrointestinal distress. What’s more, it takes less than 20 minutes to make!

Serves 2

Cook: 10 minutes
Ingredients:
2 large carrots
2 Tbsp coconut oil
1 cilantro stem, finely chopped (keep the leaves for garnish)
100 g boneless chicken thighs, sliced into small pieces (see tip below for vegan option)
½ tsp turmeric
1 egg (omit for vegan option)
1 cup green beans, cut to 1-inch long pieces
1 Tbsp coconut aminos or gluten-free soy sauce
1 Tbsp lime juice
¼ cup water
1 cup alfalfa sprouts or bean sprouts
¼ cup walnuts, chopped
¼ cup finely chopped green part of spring onion
