Recipe: Smokey “Cheese” & Broccoli Soup

As you may know, I started my nutrition journey as a Culinary Nutritionist through the Academy of Culinary Nutrition (ACN).

It was an amazing program and I learned so much all while sharpening my creative skills in the kitchen! At the time, one of my many new found skills included learning how to understand food labels and the many ingredients that can be found in packaged goods. 

So when the amazing ladies of Core & Rind (and ACN Alumni) decided to release their delicious cashew cheesy sauces to Canada I was pumped to give them a try! Their sauces are made with all whole food ingredients that I can pronounce and not a single weird, processed ingredient in sight. I immediately started dreaming up ways to enjoy the sauces. 

And then, this Smokey “Cheese” & Broccoli Soup was born! 

Smokey, cheese-y and comforting! 

The key ingredient here is, of course, the drool-worthy Smokey & Bold Core & Rind sauce that is packed with flavour and so versatile! You could make so many things with this (stay tuned for more recipes) or simple use it as a dip. One of my favourite ways to eat it is actually as a snack dip with some crispy almond flour crackers!

Recipe: Smokey “Cheese” & Broccoli Soup

Gluten-free, dairy-free

Prep: 20 minutes 
Cook: 20 minutes
Yields 1 soup pot 


Ingredients:

1 tbsp extra virgin olive oil
1 small onion, diced
2 cloves garlic, minced
2 ½ cups vegetable or chicken broth
3 cups broccoli florets, chopped into bite sized pieces
2 medium carrots, shredded 
1/2 tbsp turmeric 
1/4 cup nutritional yeast
Pinch of smokey paprika 
Salt & pepper to your taste
1 jar of Core & Rind cashew cheesy sauce (rich & smokey flavour) 
1 tbsp lemon juice 
1 tbsp apple cider vinegar (ACV)

To Make:

1)    On medium heat, heat 1 tbsp of oil in a large pot then add the onions and garlic. Sauté until fragrant, lightly browned and onions are almost translucent.
2)    Add the broccoli and carrots and sauté until softened.
3)    Add the vegetable broth and increase heat to high to bring to a boil.
4)    Once boiling, reduce heat to medium.
5)    Add the turmeric, nutritional yeast, smokey paprika and salt and pepper. Stir to combine.  
6)    Continue to cook on a low boil until broccoli and carrots have softened to your liking.
7)    Once broccoli has softened, add the Core & Rind Cashew Cheesy Sauce, lemon juice and ACV. Stir to combine.
8)    Taste and adjust seasonings to taste.
9)    Serve and enjoy!

Notes: 

*Optional to give the soup a quick blend with an immersion blender to smooth out some of the broccoli chunks 

*This would also be amazing with a slice of sourdough toast to dip!
